Candy Cane Cookies
(omit candy cane for sugar cookies, roll thin for use with cookie cutters)
Ingredients
1 cup powdered sugar
2/3 cup ground up candy cane
1 cup softened margarine or butter
1 egg
1 teaspoon vanilla
½ teaspoon almond extract
2 ½ cup gluten-free flour
2 teaspoon baking soda
2 teaspoon xanthan gum
1 teaspoon cream of tarter
Directions: Mix powdered sugar, candy cane, margarine, egg, and vanilla. In a separate bowl, mix flour, baking soda, xanthan gum, and cream of tarter, add to sugar mixture. Chill dough before baking. Heat oven to 375°. Roll dough to about ¾ inch log on lightly floured board. Roll over granulated sugar. Cut into ¾ inch pieces. Dip one end into granulated sugar
Bake 9 to 10 minutes.
