Vanilla Crispies - Mary Jean's Favs Vanilla Crispies (Modified from Betty Crocker)
1 cup sugar
1 cup margarine or butter, softened
1 egg
2 teaspoons vanilla
2 cups Sylvan Border Farm General Purpose Flour
½ teaspoon baking soda
½ teaspoon cream of tarter
½ teaspoon xanthan gum
Mix sugar, margarine, egg and vanilla. Stir in remaining ingredients. Cover and refrigerate at least 1 hour.
Heat oven to 375deg. Shape dough into 1-inch balls. Place about 2 inches apart on ungreased cookie sheet. Flatten with bottom of a glass dipped in sugar. Bake until light brown, 8 to 10 minutes. Immediately remove from cookie sheet.
