Strasbourg Onion Pie - Kathy's Favorites
This is something I always make for the holidays. The original recipe calls for frozen crescent dinner roll dough. I just use enough GF bread dough to cover the bottom and sides of the pan and it works great. I usually use Bread from Anna dough, but Pamela's or GF Pantry French Bread dough works too. Bake the leftover dough into rolls, pizza crust, or hamburger buns. 2 large onions, thinly sliced (sweet vidalias are my choice) 2 T butter 1 T cooking oil (something light like canola) 2 strips bacon, diced dash of salt 3 eggs 2/3 cup whipping cream Saute onions in butter and oil until soft but not brown, about 10 min. Cover. Add bacon bits and salt. Simmer 10 min. While they are simmering, combine eggs and whipping cream, stirring until thoroughly mixed. Refrigerate until ready to use. Smooth dough over a greased 9 x 13 pan. Combine onion mixture with egg mixture and distribute evenly over dough. Bake in a preheated oven at 400 deg. for 45 min. or until golden brown. Can be eaten warm or cold.
