Sponge Cake - Kathy's Favorites I actually prefer this to the angel food cake. It at least uses the whole egg, so no waste. And it tastes great.
5 eggsyolks
3/4 cup sugar
1/4 cup water
2 t vanilla
1/2 cup cornstarch
1/3 cup potato starch
1/4 t salt
1/4 t xanthan gum
2 t baking powder
5 egg whites
1/2 t cream of tartar
beat egg yolks until pale and begin to thicken
add next three wet ingredients and mix well
add next five dry ingredients and blend to remove lumps
beat egg whites and cream of tartar until stiff peaks form
fold egg white mix into batter
pour into ungreased angel food or tube pan with removable bottom
bake at 350 deg for 35-40 min
invert over glass bottle to cool
run knife around edge to loosen and remove from pan
