NEW AND IMPROVED!!! Onion Rings / Fried Mozzarella Onion Rings / Fried Mozzarella
2 eggs
½ cup milk
¾ cup gluten free flour mix
(I use Sylvan Border Farm General Purpose Flour)
¼ tsp xanthan gum
¼ tsp baking soda
vegetable oil
corn starch
1 med onion or string cheese sticks
Heat oil in a 12 inch skillet (or deep fryer) about 2 inch deep.
In a small bowl combine flour, xanthan gum, baking soda, set aside. In a separate bowl whip egg and milk. Add dry ingredients all at once, mixing with a whisk. Batter should be the consistency of thin pancake batter.
Slice one medium onion into rings or cut string cheese into halves, thirds or quarters, dip in corn starch. Shake or tap off excess *. Be sure oil is hot. Dip in batter and fry on each side till golden brown.
(Cheese sticks will cook much faster than onion rings. Be careful not to over cook them.)
* Lightly coating rings or cheese in corn starch is very important as this is what keeps makes batter stick.
