Ingredients:
Preheat oven to 325 degrees
In a large bowl, beat together the butter (1 1/2 sticks), honey (1/4 cup),
Sugar ( 1 cup brown) and 1 tsp. gluten free vanilla. In another bowl, blend together the flours,
1 1/2 c. brown rice flour,
1 1/2 cups of GF flour mix.
1 tsp. gelatin
2 Tbl soy flour
1 tea. xanthan gum
1 tea salt
1 tea cinnamon
1 tea baking powder
Directions:
Stir all of this into the creamed mixture (butter, honey, brown sugar and vanilla) alternately with 1/2 to 3/4 cup water, using just enough water to hold the batter in a soft ball. Refrigerate for at least one hour.
Roll out half the dough on a brown rice floured piece of plastic wrap or on a clean work top. It should be about the size of 12"x15" and about 1/8" thick. Cut each piece in the size you want the crackers to be and put on a cookie sheet. Prick each square about 5 times with a fork.
Bake about 30 min. Don't let them get too brown, especially around the edges. Repeat with the other half of the dough that's in the fridge.
