Here is some of the information covered at our June 08 meeting. From the May CDF Conference: Michelle Pietzak PhD It takes genetics plus gluten exposure to trigger Celiac Disease. Some increased risk factors are being female, not being breastfed, and multiple infections. It is still recommended to introduce gluten to infants at 6-9 months. EMA or AEA are the most reliable, most expensive -*test*-('")s and MUST be run by an experienced lab. tTG is almost as good and is less expensive. It could produce a false postive if other autoimmune diseases are present. And, it is not as accurate in young children. Go to a GI doctor if you have symptoms or positive EMA, tTG, or IgG (in IgA deficient patients) 95% of Celiac patients have the DQ2 gene, 5% the DQ8. It is VERY rare for neither to be present. Prometheus labs DQ genotype -*test*-('")ing can determine risk level. Some effects of Celiac outside the GI tract are: short stature, osteoperosis (3.5x the general risk), Dermatitis Herpetaformis, infertility, anemia (iron, folic acid, or B-12), behavior changes, siezures, night blindness, liver inflamation, and arthritis/joint pain (common even on a GFD) There is a 40x risk of cancer when not compliant to a gluten free diet. Fracture rates are 30% higher. However, there is a lower risk of lung and breast cancer on a gluten free diet. Misc info: To make self rising GF flour, add 1 1/2 tsp baking powder and 1/2 t salt per cup of GF flour. Add flour, sugar, and baking powder to equal cake mix measurements.
