Breakfast Casserole - Kathy's Favorites Here is something you can make with failed bread baking attempts. No need to throw away a loaf of bread that is not quite right.
4 cups bread cubes
3 cups milk
5 eggs
2 cups cooked breakfast meat (ham, sausage, bacon)
2 cups shredded cheese (cheddar, swiss, jack, whatever)
salt & pepper to taste
optional ingredients: chopped spinach, sauteed onion or bell pepper, green onion, diced tomatoes (drained) or just experiment with whatever you like.
Place bread cubes in 9x13 buttered pan.
Whip together eggs, milk & seasonings then pour over bread.
Spread meat, optional ingredients & top with cheese.
Cover and refrigerate overnight.
Bake uncovered at 350 for 45 minutes or until cheese begins to brown.
Let stand 5 minutes before serving.
