Apple Nut Coffee Cake
Apple Nut Coffee Cake One of my favorite desserts to take to potlucks. Everybody loves it! Preheat oven to 375 . Grease 9” x 13” pan (I use a cooking spray.) Combine: ¾ cup butter 1 cup sugar 2 eggs Beat until fluffy. Combine: 1 ½ cups rice flour 2 ¼ tsp. baking powder ¼ tsp salt 1 tsp xanthun gum ½ cup milk Add milk alternately with flour mixture. Fold in: ½ cup coconut 2 large apples, peeled and diced ½ cup walnuts, chopped Pour into prepared pan. Bake at 375 for 35-40 minutes, or until cake -*test*-('")s done. Submitted by Diana Meisler
