Angel Food Cake 1/2 cup cornstarch
1/3 cup potato starch
3/4 cup sugar
1/2 t salt
1/2 t xanthan gum
1 1/4 cup egg whites
1 t water
2 t vanilla
1 t cream of tartar
1/3 cup sugar
combine first 4 ingredients, set aside
mix next five ingredients until frothy
slowly beat in 1/3 cup of sugar, beat until stiff peaks form
fold in flour mixture
pour into ungreased angel food cake pan and press down to remove large air pockets
bake at 350 deg for 35-40 min
invert over glass bottle to cool
remove from pan when cool
