Almost German Chocolate Cake This is my grandson’s favorite cake! Preheat oven to 350 . Grease 9” x 13” pan (I use a cooking spray.) Combine: 2 cups regular rice flour 1 tsp. xanthan gum 2 cups sugar ¼ tsp. salt Combine in saucepan: 1 cup butter 3 tbsp. cocoa 1 cup water Bring to a boil; cool slightly. Add to flour mixture; blend well. Combine: 2 eggs, beaten ½ cup buttermilk 1 tsp. vanilla 1 tsp. baking soda ½ cup broken pecans ½ cup coconut Stir into flour mixture. Pour into prepared pan. Bake at 350 for approximately 40 minutes, or until cake -*test*-('")s done.
